GLUTEN-FREE CHRISTMAS CAKE

Having specific dietary requirements can sometimes mean facing a real lack of choice when it comes to enjoying traditional cakes and pastries. This gentleman was keen to have a Christmas cake of his own for once and I was able to create this beautiful, classic design to suit the needs of someone with Coeliac disease. Carefully chosen gluten-free products allowed me to adapt my recipe to bake a moist and fully-flavoured cake, covered in a perfectly crisp white icing. The sparkling red base is reflected in the beautiful snowflakes trailing across the cake and in the highlighted lettering that has an attractive raised surface. White snowflakes and tiny snowballs finish off this elegant, modern look and I was delighted that this gentleman could indeed have his Christmas cake and eat it!
