Christmas is such a feast of different baking and cooking specialities, but a traditional cake is certainly my favourite of the season. This rich fruit cake was baked using the well-loved mixture of dried fruit, nuts, spices, alcohol and a rich covering of wonderful marzipan to keep everything beautifully moist. This family, who love penguins, wanted a simple, fun design to cheer up their Christmas table. I set about creating a classic snow and ice scene, complete with an igloo and plenty of snowballs. The adorable model penguin parents and children are clearly having fun and the whole cake was apparently almost too lovely to eat!
